Peanut curry powder

An extremely versatile powder to have in your kitchen. This can be used with any South Indian dry vegetable dish and even some mixed vegetable rice dishes. I use this for making stuffed eggplant, okra and bitter gourd. 

Raw peanuts (shelled) – 1 cup
Chana dal – 1 tbsp
Urad dal – 1 tbsp
Coriander seeds – 2 tbsp
Dried red chillies – 3-4
Asafoetida – a pinch
Salt – to taste

Dry roast the peanuts in their skin and when cool remove the skin by rubbing with your palms. Keep the peanuts aside. Dry roast the rest of the ingredients till they are golden brown. When cool, grind finely everything except the peanuts. Now add the peanuts to this mixture and grind till peanuts are broken into small pieces. Add asafoetida and salt. Give it another whirl and remove and store in an airtight container in a cool and dry place.
