I have not made this halwa in many years, but one of Nisha’s college friends, Vaishnavi, reminded me of it. It seems she loved it when Nisha brought this to college along with her lunch. So here is this very simple halwa recipe. Made with just a few ingredients, this can be made very quickly.
Beetroot – 5 peel and grate (equals about 2.5 cups)
Sugar – 1 cup
Ghee – 1/3 cup
Cashews – 10 (cut into 3-4 pieces each)
Cardamom powder – 1/4 tsp
A way to reduce cooking time for this halwa is to cook the grated beetroot in the microwave for 5-6 mins. Using a tsp of the ghee fry the broken cashews till golden brown and set aside. Add the cooked beetroot to the same pot, add the sugar and keep stirring till the halwa comes together. Adding sugar will make it watery. After most of the water has evaporated add ghee and stir till halwa is done. You will know that halwa is done when the ghee starts separating from the halwa. Add the cardamom powder and mix in the fried cashews and serve. Serves 4-6.
