Fresh turmeric payasam

If you can have turmeric latte, why not make a payasam? I had about a kg of fresh turmeric and was running out of ideas as to what to make with it. I had already made a Rajasthani curry. Also made some turmeric ginger pickles and a turmeric tomato thokku. So I decided to try out a payasam and I must say, I was delighted with the end result.

Ingredients
Grated fresh turmeric – 5 tbsp
Milk – 1 litre
Palm sugar – 1/2 cup
Nutmeg – small piece
Cloves – 5
Cinnamon – 1 inch long stick
Cardamom powder – 1/4 tsp
Raisins – 15
Ghee – 1 tbsp

In a large pot add a tbsp of ghee and fry the grated turmeric. When done, add the milk and raisins and allow milk to boil and thicken to about half the original quantity. Grind the spices into a fine powder and set aside. When milk has thickened, add the sugar and continue cooking. When it all comes together, add the powdered spices and set aside. Not only does this payasam have an amazing taste and flavour, it also has a beautiful yellow colour. Serves 4.
