Oats rava idli

A nutritious and tasty alternative to the regular idli, this has the added advantage that it can be made with just a half hour lead time. Along with the benefit of being nutritious, it is very easy to make and you just can’t go wrong.

Oats – 1 1/2 cups (dry roast well and dry grind)
Rava – 1/2 cup (dry roast)
Yogurt – 1 cup
Cashews – 10 (break into small pieces)
Urad dal – 1 tsp
Chana dal – 1 tsp 
Green chillies – 1 (finely chopped)
Curry leaves – 10 (finely choppped)
Carrot – 1 (grated)
Mustard seeds – 1/2 tsp 
Asafoetida – a pinch
Ground black pepper – 1/2 tsp
Salt to taste
Eno/baking soda – 1 tsp

Put the ground oats and rava in a large bowl. Temper with mustard and add chana and urad dals and broken cashew till golden brown. Add asafoetida and chillies and add to the oats rava mixture. Add the chopped curry leaves, grated carrot, salt and pepper, mix well with yogurt and keep aside to rest for 30 mins. The dough would be quite thick so add water as required to bring it to idli dough consistency. Get the idli plates ready and add the Eno salt/baking soda so that the dough becomes bubbly. Now spoon it out in on the well oiled idli plates and steam like regular idlis. Serve with chutney of your choice. Serves 4.
