Stuffed vendaikkay (okra)

This is a really easy to make vegetable, especially if you have the stuffing ready. I always have the South Indian curry powder and the peanut curry powder in my freezer and so putting together something like this is a breeze (Click here for the peanut curry powder recipe). Moreover, I don’t deep fry or pan fry as far as possible and so all you need to do is to stuff the vegetable, be it okra or eggplant and then toss it onto the oven to get crisp.


Ingredients
Okra – 20
Peanut curry powder – 1  cup
Salt – to taste
Oil – 2 tsp

Wash, dry and slit the okra lengthwise (do not slit all the way). Carefully take the curry powder between your fingers and stuff it along the slit and try and press the okra so the powder stays inside. 

Carefully line the stuffed raw okras on a plate. Cover and cook in the microwave for 3-4 mins. On a baking tray drizzle a tsp of oil and spread evenly. Take the partially cooked okra and carefully transfer to the baking tray. Sprinkle some salt and drizzle the rest of the oil on the okra. Bake at 180 C for 10 – 15 mins or till the okra has browned.
