Fresh fruit juice halwa

The kids are home and you have already started wondering how to keep them occupied. Here is a fun way to get them involved in cooking something fun. I always say that boy or girl, everyone should be self sufficient in the kitchen. So engage them in making this fresh fruit juice halwa. That’s right, it is made with fresh fruit juice. Use any juicy fruit and get the kids to make the juice. I have used watermelon, oranges and grapes. And instead of white sugar sugar I have used palm sugar, which is a healthier option.

Ingredients
Fresh fruit juice – 3 cups
Lemon – 1
Corn flour – 3/4 cup
Palm sugar – 3/4 cup (to taste)
Ghee – 12 tbsp
Any nuts of your choice – 1/4 cup
Cardamom powder – 1 tsp

Extract juice from the fruits and set aside. In a heavy bottom pot add a tbsp of ghee and fry the nuts that have been  chopped into slivers and set aside. In the same pot, add the fruit juice, lemon juice and corn flour and mix well with a whisk. Add the sugar and half of the ghee. Mix together and keep stirring on the stove. You will need to keep stirring continuously, otherwise the corn  flour may turn lumpy. The mix will soon turn thick and translucent.

Keep mixing while adding the remaining ghee in small amounts. When the halwa turns to a marmalade like consistency, add the fried nuts, mix well and pour on to a well greased tray. Let it sit on the tray till it cools down completely. When you are able to slide a knife through it without sticking, cut into desired shapes. Will yield about 40, 1” squares.
