Mixed millet laddoos

Our traditional millets other than being a great source of fibre, vitamins, minerals and nutrients are extremely tasty and nutritious. They are indigenous to many parts of the country and if you want to eat locally grown foods, there is nothing to beat millets. This laddoo combines the goodness of millets, peanuts and jaggery so that you can enjoy a guilt free snack anytime of the day.

Ingredients
Millets (any combination) – 1 cup
Peanuts – 1 cup
Jaggery – 3/4 cup
Ghee – 2-3 tsp (as required)

Roast (dry) the millets and set aside to cool. In this recipe I have used kuthiravali, kambu, varagu and amaranth. Meanwhile, dry roast the peanuts till well roasted, remove skin and set aside. Powder the jaggery and set aside.

Dry grind the millets till they are well powdered. Remove from blender and put in a mixing bowl. Next grind the peanuts till you get a smooth peanut butter consistency. Grind the jaggery till it is a fine powder. Mix them all together till all components are well mixed. 

See if you are able to make balls with the mixture. If not, add some ghee and make the  laddoos and enjoy them whenever you feel like a snack. This should yield between 18-20 laddoos. You can store it in the fridge but it will also stay fresh for up to a week if left outside.
