Mixed vegetable halwa

Yes, you heard it right. This is a halwa made with different vegetables and is another option when you have a really sweet tooth like me. Use regular vegetables that you have at home like carrots, chow chow, potatoes, white pumpkin, yellow pumpkin, green beans, bottle gourd, cabbage and even cauliflower. Most of the vegetables can be used raw except for a couple (like cabbage and cauliflower) that need to be cooked to remove the pungency.  

This is a crumbly halwa, not a soft and gooey one and it pairs very well with vanilla ice cream.

Ingredients 
Carrot – 1  cup
Green beans – 1/2 cup
Snake gourd – 1/2 cup
Cabbage (cooked) – 1/2 cup
Cauliflower (cooked) – 1/2 cup
Watermelon rind – 1/2 cup 
Yellow pumpkin- 1/2 cup
Sugar – 1 cup
Ghee – 3/4 cup
Milk powder – 1/2 cup
Cardamom powder – 1/2 tsp
Almond slivers – 1/4 cup
Raisins – 20
Grate all the vegetables except green beans, cabbage and cauliflower which can be cut into small pieces. Cook the cabbage and cauliflower till the smell disappears. In a thick bottom pan, add some ghee and fry the almond slivers till golden and set aside. Add the rest of the ghee and when it melts add the sugar. Stir well for a few minutes and then add the vegetables, one at a time, mixing well after each vegetable is added. After all the vegetables have been added, add the raisins and continue stirring till the water from the vegetables has evaporated. Now add the milk powder and stir until it absorbs the ghee and comes together with a halwa-like consistency.

Add most of the fried almonds (keeping some aside for garnishing) and powdered cardamom and mix well. Transfer to a serving dish and garnish with remaining almond slivers.
